Talod is a brand I loved for their Nylon Khaman Dhoklas. Now found this Handwa packet and I was thrilled. It made a instant lunch for 2.
There is a recipe on the back of the pack. What kind of a food blogger am I, if I had to follow exactly what they say and then put it up over here. So here is what I did.
- I used only half of the amount of oil mentioned in the recipe. Both for mixing and for the seasoning.
- The mass for the Hadwa was provided with 1 cup of coarse grated bottle gourd.
- Instead of pan roasting/ shallow frying with the seasoning. I preferred to use the microwave+grill mode. Microwaved for 5 mins. Then unmoulded on the stand and grilled for 20 mins.
It turned out delicious and filling. Handwa or as I have always known it "Handwo" will soon be tried in my kitchen from scratch yet I know I can depend on Talod on a lazy day.
Mmm- a spicy savory cake! That is one tasty looking handvo.

DeleteTalod "Nylon" dhokla is the best! Have yet to taste a from-scratch version that tastes better. They don't seem to have any ingredients that I wouldn't use myself, so I don't feel guilty either. On my next trip I need to check out their Handwo mix too.

DeleteTalod Update, Anjali - yesterday I used the Talod khaman packet I bought in Bombay recently, and it seems like it has changed! The end result was not as good as I was used to. Slightly more dense, and did not cook as evenly. I wonder what happened. Do let me know if you try out and see something odd.
DeleteYes that happened to me too. On Sat I used a 500gms Talod packet. The Khaman did not come up evenly and I too had a dense layer at the bottom. I was thinking may be I did not mix properly. I was using a medium sized bowl to make the batter and mix rose so much after adding the contents of the little pouch (that possibly contains citric acid, baking powder and soda) I used it after long and I have always used the 200gms pack before so my choice of bowl was smaller out of habit. My guess is use a larger bowl like if using 250 gms pack use a 3 litre bowl to mix the batter. For a 500gms pack I should have used a 5 litre bowl. Mixed the bubbling agent homogenously, which I did not get a chance to do in the small bowl. I hurried poured it into the greased plates. If mixed well it should still give good results. Out of the 4 plates that I filled I got only 1 well aired one the other 3 were sad.

DeleteET I tried again with the 500 gms pack. I took a huge vessel to mix it. The dhokla turned out just like the good old Talod. The key is to mix properly for successful even leavening.
