Tomato Omlette

Tomato Omelet/ Chila / Pola/ Dosa call it what you may it is easy and ready in a jiffy and keeps you going for a long time.

The chickpea flour is the protein source and the tomato and coriander make it really tasty snack. One can have it at breakfast or even as a meal by itself. It is my favorite meal when I am on a diet. You will be surprised that if this omelet is wrapped in a chapati or made into rolls its one non messy meal ideal for kids and adults on a move. Many times when we were kids if Mom ran out of veggies she would just flip up these and we never complained.

Ingredients:

2 fine chopped tomatoes
1 big fine chopped onion
1 handful cilantro chopped
2 green chillies
1 teaspoon red chili powder
1/2 teaspoon haldi
1/2 teaspoon coriander powder
1 teaspoon jeera
1 table spoon soji (optional)
3/4 cup chickpea flour
salt to taste
1/4 teaspoon sugar
1/2 cup water
oil for frying

Mix all items together with water. Fry these on both sides on a non-stick girdle with minimum oil. Make either big circle or spoonful small ones. Serve hot with coconut chutney or tomato sauce.
